Commissary Manager – Retail Food Industry – Cape Town

Job Summary:

The Commissary Manager is responsible for the full operational oversight of a central food production facility. This includes managing production, staff, logistics, inventory, warehouse operations, food safety compliance, and equipment maintenance to ensure the timely supply of high-quality products and related products. The role demands strong leadership, operational excellence, and the ability to meet business demands efficiently and safely.

🔑 5 Key Skills Required:

1. Leadership & Team Management

   • Ability to lead, coach, and discipline large, diverse teams working in shifts.

2. Production & Operations Management

   • Skilled in overseeing food manufacturing processes, production scheduling, cost control, and waste reduction.

3. Food Safety & Compliance

   • Strong knowledge of HACCP, GMP, health regulations, and audit readiness.

4. Logistics & Inventory Control

   • Experience managing fleet logistics, warehouse stock rotation (FIFO), procurement, and timely distribution.

5. Problem-Solving & Analytical Skills

   • High attention to detail with the ability to troubleshoot operational issues and optimize resources effectively.

Qualifications and Requirements:

• • Not a position for a clock watcher. Role requires the involvement of a person that recognizes the need to be present, at times, in the evening – when production is at full capacity.

    • A peoples person who is comfortable managing diverse teams and shows effective communication and interpersonal skills.
      · Competency in MS Office and production software/systems (e.g., PRP, ERP systems). Knowledge or experience with GAAP is advantageous.

    Experience and Qualifications:

    • Grade 12 or equivalent (Required).
      · Tertiary qualification in Production, Food Technology or any other related qualification (Advantageous)
      · Minimum of 5 years’ experience in a food manufacturing or bakery environment, with at least 3 years in a leadership role.
      · Experience managing large teams and shift operations.
      · Proven ability to manage food safety and quality systems.

Salary offered : R 35k – R38k
